panini sandwiches

In theory, I like to plan our family's dinners ahead of time. But more often than not, 6:00 p.m. comes around and I have nothing prepared. My parents gave me a panini press a couple of months ago for my birthday and my family has been enjoying grilled sandwiches ever since. They're great for dinner – quick, easy, and delicious. I buy a variety of Boar's Head meats and cheeses and everyone can create their own. My current favorite is roast beef, havarti and Dijon mustard on sourdough and my husband's is turkey, Swiss cheese and cajun mayo on a whole wheat tortilla (pictured above). I also love tomato, basil and mozzarella sandwiches and my kids think cheddar on wheat bread is the best. Do you have any grilled sandwich combinations that you love that we should try?

I do so love my panini press. The roast beef sandwich sounds delicious; I'll have to make a mental note about that one. My favorites are chicken, pesto, and provolone on sourdough, and tuna with black olive spread and provolone on ciabatta. Yum!

Oh Megan-that chicken with pesto & provolone sounds yummy! My go-to lunch these days is Boar's Head Honey Maple Turkey with provolone and a layer of whole berry cranberry sauce as the condiment. Tastes like Thanksgiving dinner!

You must try prosciutto, artichoke, and brie! I had it on the menu at a cuuuute place on the San Francisco Bay in Sausalito. I've been making it at home ever since....

Mmmm! that looks so good and is exactly what I am going to have for lunch. I'm lucky to work next to a fabulous sandwich place with the best paninis. I like adding mushrooms and tomato to mine.

This post took me back to your dorm room where we made grilled cheese sandwiches with Great Harvest wheat bread on your little sandwich maker. I just got a panini press for Christmas from my parents so I'll have to try out some of these recipes.

cuban paninis are a favorite of ours-great when there's leftover pork tenderloin-we loved grilled sandwiches-you can never go wrong with melted cheese.

A few years ago, I worked at a Panini/Gelato Cafe. My favorite Panini is one with Basil Pesto and Balsamic Vinegar, with slightly sauteed mushrooms, onions, cherry tomatoes, and sometimes even bell peppers. I use mozzarella or pepper jack cheese. I use the mushrooms in place of meat, but my husband uses them in addition to his choice of meat.

Apple butter, bacon and cheddar on wheat. Or you can sub thin apple slices for the apple butter. Also thin apple slices with brie on a country french bread are so good. I know I'm into the apples here, but it must be tried! We have had a panini grill for a few years now and still aren't sick of them. Also try dessert ones: our favorites involve croissants split open and filled with small dark chocolate chips, or filled with cream cheese and raspberry preserves. Or nutella and thin banana slices. Oh man, I think I have to go make some food now.

Try wheat berry bread with butter, a thin apple slice, bacon and cheddar. Thanks for the dinner inspiration tonight!

My favorite is always bologna, american cheese on white bread! Family favorite.

Harry + David barlett pear and brie on sourdough - those pears are so very, very good. Try a bit of dijon on those grilled cheese, my kids (2 of them) approve.

i heard brie, cranberry sauce and turkey is good!

The best panini I've ever had is a spin on the classic grilled cheese: herbed ciabatta bread, havarti and ricotta cheese with a balsamic vinegar glaze on each side of the bread. Heavenly!!
