chick cookies in a coconut nest
Last week, my daughter's preschool teacher reminded me that I had signed up to bring a "sweet treat" for Amelia's class party. The teacher, whom I love, then said, "...and I know you're going to make something fantastic!" My heart sank a bit – work was crazy with various deadlines and the last thing I had time for was an over-the-top dessert that only my mother, the teacher and I would appreciate. However, never one to turn down a creative challenge, I set to work. What I needed was something cute, clever and fast....
Thankfully, last weekend, I made Easter sugar cookies and stuck them in the freezer. I decided to use the chicks and create a "nest." I took one can of sweetened condensed milk and Amelia mixed it with 1-1/2 bags of shredded coconut. We added a few drops of green food coloring to achieve green-grasslike authenticity. Spoonfuls of "grass" were placed in miniature plastic cups – so glad I saved these from a past party! To complete the treat, Amelia added carefully chosen candy "eggs" and placed a frosted cookie on top.
Amelia was thrilled – she had helped with nearly every aspect of the dessert and I was thrilled that the results were somewhat impressive but relatively painless.
Let's just hope the rest of our Easter preparations go as smoothly!

Where did you get your chick cookie cutter? I would love to make these. They are adorable. And also as a previous teacher I would've loved to had a mom like you for a parent to one of my students.
