salmon teriyaki dinner
In my former life (i.e. before children), I used to pour over cooking magazines and cookbooks, flagging new recipes I was anxious to try. Cooking was a pleasure – my husband and I loved to try new dishes. Now, with three small children who all have different opinions on food (namely, "why aren't we having pizza?"), I am sad to admit that I find myself dreading dinnertime.
Therefore, I am always looking for quick, healthy recipes that everyone in the family will enjoy. My go-to dish is salmon teriyaki – everyone loves it and the best part is it can be prepared in the morning and popped in the oven 20 minutes before dinner. Served over brown rice with a side of fresh green beans, a sprinkling of edamame and a scoop of sweet corn pudding, it's a delicious and somewhat impressive dish.

this is one of our favorites as well... except i just get the marinade from the grocery store;) And i always love your sweet corn pudding. Hope all is well.
I think the challenge is, as well, to satisfy all the different taste buds that are developing around the table as well. This sounds really good--I'll have to try it. I can't imagine that I would ever pass along a recipe to you, but these are two favorites for our family. They aren't pizza, but they are pasta which is a second best option for our kids. They are a mature enough pasta dish that my husband and I don't feel cheated - especially when paired with a green salad.

Ooo, I'll try the salmon recipe, looks really good.
This recipe is a hit every time and would be perfect for Cinco de Mayo. It's nice because it feels lighter than traditional enchiladas without the fried tortillas and the zucchini is virtually hidden, so the kids will never know.
HONEY LIME ENCHILADAS
6 Tablespoons Honey
5 Tablespoons Lime (about 2 limes)
1 Tablespoon Chili Powder
1/2 teaspoon garlic powder
¼-1/2 tsp nutmeg
1 pound chicken breasts
15 tortillas
1 shredded zucchini
1 pound Monterey Jack Cheese, shredded
16 ounce green chili enchilada sauce
1 cup sour cream
Mix the 1st 4 ingredients together and pour about 2/3 of this mixture over chicken in crockpot. Cook just till chicken is tender and shreddable. DO NOT OVERCOOK. Remove shredded chicken.
Pour 1/2 cup enchilada sauce on the bottom of a 9x13 and 8x8 baking pan.
Combine rest of enchilada sauce with the remaining honey lime mixture and the sour cream.
Reserve about ¾ of a cup of cheese to sprinkle on top.
Then combine chicken, rest of the cheese, nutmeg, and zucchini.
Fill tortillas with this mixture.
Pour sauce mix over top of all and sprinkle with cheese.
Bake at 350 degrees for 30 minutes.
Wow, wow! That's all my husband could say when he was eating this last night for dinner. He grilled it instead of baking it. It turned out superb! And my first born said it was great and helped himself to more and he sooooo doesn't like salmon! Thank you for giving our family a new favorite recipe. Cheers!
